How did the white asparagus arrive in Alsace:

Louis Gustave Heyler (1836-1904) is the one who discovered the asparagus while he was in Algeria. He brought it back to Hoerdt and started cultivating it in his garden. A few locals started doing the same. A few years later, the tradition of enjoying white asparagus is in everyone’s mind from the end of April to the end of May. It is best enjoyed with different sauces, hams and local charcuterie.
